A vineyard selection of the best-quality freisa grapes gives a lightly-effervescent, deephued wine that releases rich wild berry fruit with the raspberry notes typical of Freisa. Dry, with a tasty vein of acidity. Luna di maggio is an impressive wine but always easy to enjoy. It pairs well with all the traitional partners of Freisa. enjoy at 16-18°C

Every year we select the best grapes of Freisa from Cornareto Hill and then we bottle it in may, when the wine has fully completed its natural cycle.
Luna di Maggio is midly lively, because before bottling it we add in the autoclave a small quantity of sweet wine, thus re-starting the fermentation process, which enriches this wine of its typical perlage.

Bonarda is one of Piedmont’s venerable and prized grape varieties, as well as a wine typical of the Oltrepò Pavese area. We produce limited amounts of our bonarda, with its refines nose of red berry fruit enriched by nuances of spice, subtle but recognisable. The slight effervescence of Moyè increases the appeal of its palate, bringing ou its freshness without compromising its complexity. Served chilled, it is wonderful with marinates and stews, or with Piedmont’s traditional fritto misto.

Once the alcoholic fermentation with selected yeasts is over, the new wine is stored for some months at 18°, so to help the fulfilment of the malolactic fermentation.
It follows natural settling with the separation of the deposits and a refinement in steel barrels. In spring, shortly before bottling, we add a small amount of sweet wine; it starts a new fermentaton which enriches the Bonarda of its typical bubbles, making it a very pleasant and easy to drink wine.

BARBERA D’ASTI

Barbera, after long years of oblivion, represents nowadays one of the most remarkable products of Piedmont wine making. A drastic lowering of yields has allowed to keep down the excessive acidity and to obtain a youg wine, with an intense ruby-red colour. its intense perfumes introduce pleasant fruity scents, among which blackberry prevails. It’s a well structured wine with a bright acidity balanced by fruity flavours, dry, persistent.
The tannic note is well perceptible but not intrusive. This wine stay in the bottle for few years. We recommend that the wine is served at about 18°. It complements hearty dishes of red meats, and aged cheeses.

We make this wine from our Barbera grapes, with careful attention to carry out extreme soft pressing. The wine passes trought a special machinery developed by us for the mixing without pumps. The fermentation process takes one week to reach a temperature of 28°. the maturation is carried out in steel barrels to exalt only the fruity perfumes.

FREISA D’ASTI

This wine will delight Freisa lovers since the very first taste, offering them a perfect balance of body, flavours and acidity. The colour is an intense ruby red; the nose has delicate hints of wild berries, an intensified raspberry with a lighter trace of blackberryand rose, a combination which surprises. Fresh and at the same time velvety, it is embracing on the palate.
It’s a Freisa much softer and more structured than usual, the tannic note, typical of this vine, are here reduced. Excellent if served with meat, mild mature cheese and also with more demanding dishes like braised beef.

The skin is left on the grapes for 5-6 days, soaked in the must with frequent mixing to obtain a good extraction of the colour. This operation restricts also the transfer of the tannin present in big quantifies in Freisa grapes.
The wine is stored in the steel barrels for one year to preserve its characteristics and the freshness of its fruit.
Bottled after 12 moths, it matures in the bottle for some months and can be preserved for several years.

Cascina Gilli has played an important role in rescuing two grape varieties, Freisa and Malvasia, which during the years had been unfairly neglected.
Today we are focusing our commitment towards another grape variety, almost forgotten, but which finds a soft spot in our hearts: Bonarda Piemonte.
Usually Bonarda is produced slightly sparkling, but we have made a limited production of this Bonarda Piemonte in a still version, dedicated to our most loyal customers. The result is our Bonarda Sernù, a wine with a delicate bouquet, yet full and generous that seduces the taster. Its measured alcohol and acidity allow full scope to the admirable balance of its fruit. Part of the wine briefly ages in oak barrels.

The grapes are left to ferment six-eight days at a temperature of 26°, so to obtain a good extraction of colour, which has purple hues.
After the malolactic fermentation and the settling the wine stays partly in oak barrels and partly in stainless steel for over a year.
Only the following spring the wine is assembled in the bottle, where it settles for some months.

Dèdica is our interpretation of Barbera d’Asti in its superior version, whom we dedicate exclusively our best grapes. A careful pruning in vineyards and a scrupulous working in the wine cellar have permitted the production of this soft and persistent wine, which is destined to give new surprises in terms of elegance and complexity. The marked tastes of small fruit like blackberry and raspberry melt and evolve together with the vanilla given by the wood of the barrel, making intense and balanced sensations. Dèdica in its whole complexity, typical of a Barbera Superiore, reveals on one hand an important capacity of aging, on the other an immediate pleasantness.

Dédica is produced exclusively with the grapes of our old vineyards which are more than 70 years old, located on the hills of Schierano. Only the small yields of these plants and a extended maturation, combined with a long fermentation and a 9 months aging in barrels, made a great chromatic intensity and a wide range of aromas, even more elegant, balsamic and defined.

Arvelè, in Piemonte dialect, means „revelation“.
The first sip of Arvelè will delight aficionados of Freisa. only the best lots of freisa go into this selection, and it then spends 8 months in small barrels of second pass. The cosequent slow oxidation and absorption of compounds from the oak have softened the tannins, deepened its rich ruby tonality, and brought out of those aromas traditional to Freisa. Wild berry fruit, raspberry, and subtle hints of blackberry and rose petals meld appealingly into subtly pungent note of vanilla and tobacco leaf. The palate is crisp and fresh,yet at the same time mouthfilling and velvet-textured.

We have selected the grapes for this very special wine from an old, almost historical, vineyard in Cornareto hill. The direct management of our vineyards allows us to drastically lower yields per hectare, thus obtaining perfect ripening of the grapes, which result almost withered.
Trought a traditional working, with frequents remix and delestages, we extract a significant amount of tannins and colour, thus obtaining a wine with an important structure, which ensures it a long evolution and longevity.
The passage in oak barrels allows a slow and optimal transfer of the oxygen, making Arvelè a creamy, rich, persistent and surprising wine, with a very long lasting.

Rafè

Rafè’s pale straw-yellow hue reveals to the attentive eye intriguing greenish highlights. Pronounced floral notes predominate among its complex aromas, followed by delicious, fresh acidity that is nicely complemented by a subtable fruity finish.
Served well chilled, it is delicious with fish dishes and light risottos, as well as with full-flavoured cured prosciutto.

The working of this wine starts with a soft pressing, so extract the juice without damaging the rasps. A following clrification allows to ferent a clear must. This must stays for a long time in cntact with our selected yeasts, thus enriching it of its typical scents.
The wine is bottled at the beginning of the following year.

Lirico

MONFERRATO CHIARETTO

Lirico is a rosè of pleasing quality and freshness, a small concert of fruity and floral aromas. Among the delicate notes of cherry and raspberry, the canine rose stands out, with violet and iris. Served at 10-12 °C, it pairs with apetizers, fish and crustaceans, cheeses and cold dishes.

The label Lirico was born in 2016 from the vinification of Freisa combined with a small part of Bonarda piemontese. Following a short phase of maceration, fermentation is slow and at low temperatures, so as to extract all the fruity and floral scents of this wine. The slight liveliness is due to the natural fermentation of the wine in autoclave, initiated by the addition of a small amount of sweet wine.

Gilli

MALVASIA DI CASTELNUOVO DON BOSCO

Gilli is a midly effervescent sweet red wine with low alcohol content (5.5%) made from one of the most appealing aromatic red grapes, the Malvasia di Schierano. It is characterized by an unusual marriage of freshness and aromatic complexity. Wild red berry fruit is evident on the nose, along with fascinating hints of blossoms, particularly wisteria and iris. Served well chilled (6-8°C), it is ideal with different types of desserts as well as with fresh fruit and petits fours.

The grapes are softly pressed, the skins and the must are left together for a brief fermentation period to extract the colour and to obtain some degrees of alcohol. The must is preserved at low temperature so to keep its natural freshness and perfumes. Before bottling it, it is afterwards re-fermented in an autoclave, with the help of selected yeasts until the alcohol content reaches 5,5° and the must assumes its typical vivacity.
Before bottling it, the wine is micro-filtered to obtain optimal conservation and stop any further fermentation.

Dlicà

VINO ROSSO DA UVE STRAMATURE

It’s a sweet meditation wine, made by the natural drying of the best grapes of Malvasia. It is characterized by intense aromatic notes and ruby red color, with a delicate and fine bouquet. Above subtle notes of wisteria, they stand out notes of red fruit jam, raspberry and blackberry, wrapped in delicate shades of dried rose. In the mouth the impact is warm, particularly deep, delineating a wine that is rich in taste, soft and persistent. Ideal combination for different types of desserts and herbaceous cheeses. Serve at a temperature of 8-10 °C.

During the most dry and favourable years, a little amount of grapes is left on the vines untill November; then they are harvested and gently pressed. After a long fermentation, which gets interrupted spontaneusly at 13 alcohol degrees, the wine matures for one year in steel in order to reach the perfect balance. The evolution continues for other six months in the bottle.
